Apple Cinnamon Muffins

Bring a crunch to a classic!

Ingredients:

  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 medium apple, peeled and chopped (about 1 ½ cups)
  • ½ cup sugar
  • ½ cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup coarsely chopped Apple Cinnamon Crunchy Roller

Streusel topping

  • 2 tablespoons flour
  • 2 tablespoons light brown sugar
  • 2 tablespoons butter, cut into small pieces
  • ½ teaspoon cinnamon
  • ½ cup coarsely chopped Apple Cinnamon Crunchy Roller 

Instructions:

Preheat oven to 400°F and place muffin cup liners in muffin tins. 

In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.

In another bowl, stir together milk, vegetable oil, 2 eggs, and vanilla extract.

In a third small bowl, stir together apples and 1/2 cup sugar. Set aside for 5 minutes until sugar is slightly dissolved and apples release their juices. Add apple/sugar mixture to milk mixture, stir until combined.

Add the flour mixture to the wet mixture and stir to combine. Fold in the ½ cup of chopped Apple Cinnamon Crunchy Rollers, then spoon batter into muffin tin (filling them 2/3 of the way)

For the streusel topping, in a small bowl using a fork, combine the flour, brown sugar, butter, cinnamon and the remaining chopped Apple Cinnamon Crunchy Rollers together until crumbly in texture. Sprinkle the topping over each muffin, lightly pressing the topping into the batter with your hands or a spoon.

Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
