Friendly Banana Cream Pie

Enjoy this summer time classic with a Friendly twist!

Ingredients:

  • 6 Original Brown Rice Friendly Grains Crunchy Rollers 
  • 2 tablespoons butter, melted
  • 2 cups milk, divided use
  • 3 tablespoons cornstarch
  • 1/3 cup sugar
  • 2 egg yolks
  • 1 tablespoons butter
  • 1 teaspoon vanilla extract
  • 4 small bananas, sliced
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar

Instructions:

Break Crunchy Rollers in smaller pieces and place in a food processor. Pulse the food processor several times in short bursts to coarsely chop the FGCR into small pieces (about pea size). Remove ½ cup of the crumbled mixture and reserve for topping.

Drizzle butter over the remaining Crunchy Rollers mixture and pulse 2 to 3 times in short bursts to bring mixture together. Pour mixture into the bottom of a pie or quiche-style pan. 

Bake in a preheated 350°F oven for 8 to 10 minutes, until golden brown. Set aside to cool.

For the filling, pour ½ cup of the milk into a small bowl, and stir in the cornstarch until dissolved. Pour the remaining milk into a small saucepan and cook over medium-heat until steaming (do not boil). 

Meanwhile, lightly beat the egg yolks with a whisk or fork. When milk is steaming, ladle approximately ½ cup of the milk into the bowl with the egg yolks, whisking constantly. Pour the egg mixture into the pan with the milk, stirring constantly so that the eggs do not curdle. Add in the milk/cornstarch mixture and whisk to combine. Cook over medium-heat for 5 to 6 minutes, stirring smoothly and consistently (not too fast or slow!) until mixture is thickened. Remove from heat and add the butter and vanilla extract and stir to combine. Pour mixture into a medium bowl and cool at least 30 minutes, stirring occasionally to help mixture release heat and cool quicker. You may cover and refrigerate up to 1 day if needed.

For whipped topping, place whipping cream in a medium bowl, and beat with an electric hand mixture until medium-peaks form. Add powdered sugar and beat for an additional 30 seconds to combine and when desired texture is reached.

To assemble pie, spoon ½ of the vanilla pudding mixture into the bottom of the prepared pie crust. Add a single layer of banana slices evenly over the mixture. Repeat the layers 2 more times, using remaining ingredients. Spoon the whipped cream evenly over the pudding filling to the edges of the crust and smooth with a spatula. Sprinkle the remaining FGCR crumbles over the pie for garnish. Enjoy!

Pro Tip: If you are short on time, you may use quick-mix vanilla pudding (follow package directions) for the filling and whipped topping in place of freshly whipped cream.
